Blast freezing has become an essential way to store food products at their very best until the time they are needed. This allows our customers to manage seasonal peaks, to build stocks and to run larger batches making production more efficient.

The advantage of ACS&T’s blast freezing process is all about speed; products can be rapidly reduced in temperature to -18°C in less than four hours.  Super-cooled air is literally blasted throughout the freezer, allowing more contact with the food, and bringing it rapidly below freezing temperature.

During the freezing process, water molecules turn to crystals.  The faster the freezing time, the smaller the crystals, which means all the qualities of the products are maximised and safely locked in.

We hold the products in temperature controlled deep storage until they are needed, when they are reinstated to their original temperature by tempering specialists, preserving the original quality of the food.
